The principal red grape of Veneto's Valpolicella blend (with Rondinella and Molinara), Corvina is also the main grape of Amarone della Valpolicella — the powerful wine made from grapes dried for months on straw mats to concentrate sugars and flavours. Wines are medium- to full-bodied with sour-cherry, red-currant and savoury herbal notes; Amarone is intense, rich, bittersweet, almost port-like. Corvina is the foundation of one of Italy's most distinctive winemaking traditions.
