Known as Mataro in Australia, Monastrell in Spain, and Mourvèdre in France, this thick-skinned, late-ripening red is the backbone of Bandol in Provence — one of France's most age-worthy and savoury reds. The grape needs heat, sun and proximity to the sea to ripen, producing dense, structured wines with gamey, leathery, peppery and dark-fruit notes. Also a key blending grape in Châteauneuf-du-Pape (the M of GSM) and increasingly a serious varietal in South Australia.
