Palomino Fino is the white grape behind almost all Sherry — the most singular fortified-wine tradition in the world. The grape itself is neutral in flavour, making it the perfect canvas for the regional winemaking that transforms it: ageing under flor yeast (Fino, Manzanilla), oxidative ageing (Amontillado, Oloroso) and combinations. Grown on the chalky albariza soils of Jerez. Same grape as Portugal's misnamed Malvasia Rei.
