Filipa Pato

Filipa Pato, with her husband William Wouters, leads one of the most influential voices in modern Bairrada. The project works with old-vine Baga and Bical in organic and biodynamic mode, with minimalist winemaking in amphora, concrete and old wood. The visit to the small winery in Ois do Bairro — often guided by the couple themselves — includes vineyard walks, tastings of the celebrated Nossa Calcário, Nossa Missão and Não Crisis sparkling, plus gastronomic experiences that draw on William's haute-cuisine background.

Daughter of the legendary Luís Pato, Filipa Pato launched her own project in 2001 with sommelier husband William Wouters, focused on old vines, organic farming and pure Bairrada expression.
