Port wine Tawny Reserve of quality that honours 700 years of the Portuguese Navy’s service to Portugal. Until about 1756, the “ship wines,” as Porto wines were then called, followed the so‑called old winemaking process. Distillation, always on a small scale, took place only after fermentation had finished, producing dry wines. In 1820 the modern distillation method was introduced, which halted alcoholic fermentation and yielded sweet wines. This method only became widespread in 1852, when Port wines began to resemble the modern styles. Thus, Port wine is a fortified wine made in the Demarcated Douro region under conditions shaped by natural and human factors. Its traditional production involves stopping the must’s fermentation by adding grape brandy, crowding the wines, and then ageing. Port wines are classified into different categories according to ageing, ranging from Ruby, Tawny, White and Rosé. The bottling year may not match the image shown. (illustrative only)
