Quality Tawny Port that pays tribute to the 750th anniversary of Queen Saint Isabel of Portugal. Until about 1756, the production of “shipping wines,” as Port wines were then known, followed the so‑called “old process” of winemaking. Fortification, always in small volumes, only took place after fermentation had finished, resulting in dry wines. In 1820 the modern fortification process emerged, deliberately stopping alcoholic fermentation and yielding sweet wines. This method only became widespread in 1852, at which point Port wines began to resemble their modern forms. Thus, Port wine is a fortified wine produced in the Demarcated Region of the Douro under special conditions stemming from natural and human factors. The traditional production process involves halting must fermentation by adding grape spirit, batching the wines, and then ageing. Port wines are divided into different categories according to ageing type, ranging among Ruby, Tawny, White and Rosé styles. The bottling year may not match the image shown (illustrative only).
