Adega de Penalva is today one of the most sought‑after reds of the Cooperativa de Penalva and a winning bet by the enology team, who aimed to revive the aromas and flavours of the most planted grape variety in the region up to the 1980s. Vinification: crushing with total destemming, fermentation in 30 °C stainless steel tanks, 12 months ageing in new and used barrels, and bottling after 18 months. Ideal for pairing with hearty dishes such as grilled octopus or oven‑roasted entrecosto. Enology: António Pina Analytical parameters: Alcohol: 13.5 % vol.
