This Adro da Sé Reserva certainly seems to have enjoyed a rather indulgent upbringing, with its deep ruby hue and a hint of pomegranate. The producer, UDACA, credits a carefully controlled fermentation at 28°C for those luscious red fruit notes, alongside a warming spice influence. Four years in stainless steel followed by ten months in new oak has resulted in a remarkably persistent finish – perfect for a long, pleasurable discussion, particularly alongside a hearty, roasted beef. It’s a wine practically brimming with Dão heritage (nearly 60% of the region’s production!), so deserving of a thoughtful appreciation.
