“The result is a spirit that clearly has a worldly character. A vibrant acidity, stemming from the grapes, is beautifully contrasted by the influence of a Charentais still. Six years aging in Limousin oak have imparted a subtle woodiness – a nod, perhaps, to a fondness for a good whisky. It’s wonderfully balanced and would pair perfectly with aged cheeses or a classic pastel de nata.”
