“This Alijó is a delightful invitation to lightness, really showcasing the Moscatel with a fermentation that carefully reveals its delicate nuances. A brief, gentle maceration – just a day or two – allows the grape to fully express its aromatic potential. Following this, a touch of stainless steel adds a refreshing smoothness, and ageing in new oak barrels develops a wonderfully complex character. Best enjoyed cool, between 10-12°C, it’s perfect for a relaxed moment and pairs beautifully with fresh fruit or even a light cheese.”
