Description

Altano The first harvests (2007, 2008 and 2009) were produced exclusively from grapes grown on Quinta de Assares, the first of the Symington family’s three vineyards in the Vilariça valley to receive full organic certification. The remaining estates, Ataíde and Canada, obtained organic certification from the 2010 vintage onward. Vinification: Rigorous selection of grapes by pick‑up (triage); complete de‑picking and crushing; inoculation with selected yeast; fermentation in stainless‑steel tanks with prolonged maceration and controlled‑temperature rest at 25–26 °C. Maturation: nine to ten months in French oak barrels.
