The gentle maceration, carried out at pleasantly cool temperatures (22-24°C), suggests a careful approach to extracting flavour, preventing the tannins – likely from Touriga Nacional and Tinta Barroca – from becoming overly assertive. The result is a remarkably aromatic wine, almost as if it’s whispering, ideally paired with black pork with pumpkin compote for a truly harmonious experience.
