“L’Ermita” is a truly remarkable wine – a tiny jewel from the Priorat, crafted with the obsessive precision of a watchmaker and the unwavering patience of a monk. This blend of Grenache, alongside a touch of Macabeo and Pedro Ximénez (a closely guarded secret!), spends its maturation on diagonal limestone, benefiting from a north-easterly aspect at an altitude of 350-430 metres. With nearly a century of age and a remarkably dense planting scheme, the result is a wine boasting a pH of 3.27 – demanding respect – and a powerful 14.5% alcohol. The underlying shale structure beautifully complements the wine’s intensity. As revered by Palacios himself, this Priorat, the first to earn the Gran Vi de Vinya Classificada designation, clearly needs time to fully unfurl in the bottle. Produced with a yield of just 15.27hl/ha, the 2900 bottles are guaranteed to be a truly unforgettable experience, ideally paired with hearty game.
