This Alves de Sousa Reserva Pessoal is a wine that’s clearly taken its time maturing. The complete délestage and a mere 24-hour maceration of the Viosinho and Gouveio grapes, complemented by Malvasia Fina, suggests a rather contemplative approach. The gentle use of batonnage during fermentation – effectively prolonging the dialogue with the grape skins – is intended to build a considerable complexity that unfolds gradually. Six months in French oak certainly weren’t the longest aging period, but the result is a remarkably elegant Porto, perfectly suited to elevate a classic bacalhau à Brás.
