This Andreza from Francisco Baptista is a patiently crafted white wine from the Douro. It seems the producer really trusts in taking things slow – a gentle crushing followed by a 12-hour maceration with Verdelho, Códega and Viosinho. A careful, cold clarification and the use of selected yeasts ensure the fermentation respects the character of these indigenous grape varieties. Best enjoyed with a generous portion of grilled white fish to really unlock its potential.
