Fermentation in 400-litre French oak barrels, incorporating *bâtonnage* – stirring the lees – adds a remarkable complexity, hinting at Anselmo’s careful approach with oak. The result is a wine of silky texture, carrying a pronounced mineral note reminiscent of wet stone, alongside a refreshing hint of white pepper and a remarkably persistent finish. A well-deserved 96 points – a wine as surprising and original as its creator, ideally paired with seafood or white fish.
