A cool, 14°C maceration for 24 hours, combined with a brief stainless steel contact, delivers a vibrant acidity that beautifully complements the fresh fruit character of the grapes. Careful fermentation, held at a moderate temperature for 12 days, intensifies both the colour and the aromas. It promises a refined and lingering finish – though perhaps a little overblown for a rosé from the Madeira, it pairs wonderfully with grilled fish and a squeeze of lemon.”
