Once its authenticity is guaranteed, virgin oils are classified by quality, fitting into the categories of “Extra Virgin Olive Oil” or “Virgin Olive Oil.” Thus, the “Extra Virgin Olive Oil” category includes oils of superior quality, with an intense fresh‑olive flavor and aroma, acidity equal to or below 0.8%, and no organoleptic defects.
