Virgin olive oil is obtained solely from the olive fruit using mechanical or other physical processes, under conditions that do not alter the oil and that involve no treatments beyond washing, decantation, centrifugation, and filtration. Oils produced with solvents, chemical or biochemical adjuvants, re‑esterification processes, or mixed with oils of another nature are excluded. Once its genuineness is confirmed, virgin oils are classified by quality and may be labelled as “Extra Virgin Olive Oil” or “Virgin Olive Oil.” Thus, the “Extra Virgin Olive Oil” category includes oils of superior quality, with an intense fresh‑olive flavour and aroma, acidity of 0.8 % or less, and no organoleptic defects.
