Description

The Cobrançosa olive variety hails from Trás-os-Montes and is known for crafting fruit‑forward olive oils that boast an intense green hue, with aromas of freshly cut grass, olive leaf, tomato stem, and green banana. On the palate it delivers a complex bitter and spicy character, with a persistent finish. Virgin olive oil is produced solely from the fruit using mechanical or other physical methods, under conditions that do not alter the oil and that involve no treatments beyond washing, decantation, centrifugation, and filtration—excluding oils derived with solvents, chemical or biochemical adjuvants, re‑esterification processes, or blends with other oils. Once its authenticity is verified, virgin oils are graded by quality, falling into either “Extra Virgin Olive Oil” or “Virgin Olive Oil” categories. The “Extra Virgin Olive Oil” designation is reserved for oils of superior quality, featuring a strong, fresh olive flavour and aroma, an acidity of 0.8 % or less, and no organoleptic defects. *(illustrative image only)*
