Description

One of the rarest olive varieties grown on Portuguese soil, the Madural is primarily used for producing olive oil in Trás‑os‑Montes. Aromatically it offers green, almond‑shelled and dried‑fruit notes, revealing on the palate a sweetness harmonised with bitter and spicy nuances. Virgin olive oil is obtained solely from the olive fruit through mechanical or other physical processes, in conditions that do not alter the oil and that involve only washing, decantation, centrifugation and filtration—excluding oils made with solvents, chemical or biochemical additives, re‑esterification, or blends with other oils. Once its authenticity is confirmed, virgin oils are classified by quality, falling into the “Extra Virgin Olive Oil” or “Virgin Olive Oil” categories. The “Extra Virgin” designation indicates superior quality, with an intense, fresh olive flavour and aroma, acidity of 0.8 % or less, and no organoleptic defects. (Illustrative image only)
