Description

A Azeitona Verdeal adapts well to virtually any Portuguese soil, being common in both Alentejo and Trás-os-Montes. The olive oil obtained from this variety presents a fruity profile with a distinct green hue, aromatically characterized by notes of freshly cut grass, green tomato, and fresh olive. On the palate it is quite bitter and peppery. Virgin olive oil is extracted from the olive fruit solely through mechanical or other physical processes, under conditions that do not alter the oil and without any treatments beyond washing, decanting, centrifugation, and filtration, excluding oils obtained with solvents, chemical or biochemical adjuvants, or reesterification processes, and any blend with oils of another nature. Once its genuineness is guaranteed, virgin oils are classified according to their quality, and can belong to the “Extra Virgin Olive Oil” or “Virgin Olive Oil” categories. Thus, the “Extra Virgin Olive Oil” category includes oils of superior quality, with intense fresh olive flavor and aroma, acidity equal to or below 0.8%, and no organoleptic defects.
