Extra‑virgin olive oil is produced from the olive fruit solely through mechanical or other physical processes, under conditions that do not alter the oil and without any treatments beyond washing, decanting, centrifugation and filtration. Solvent‑obtained oils, oils with chemical or biochemical adjuvants, reesterification processes, or any blends with other oils are excluded. Once its authenticity is guaranteed, extra‑virgin and virgin oils are classified by quality. The “Extra Virgin Olive Oil” category includes oils of superior quality, with a strong, fresh olive flavour and aroma, acidity of 0.8 % or less, and no organoleptic defects.
