Virgin olive oil is obtained from the olive tree fruit solely through mechanical or other physical processes, under conditions that do not alter the oil and that have not undergone treatments beyond washing, decantation, centrifugation, and filtration, excluding oils obtained with solvents, chemical or biochemical additives, reesterification processes, or any mixing with oils of other natures. Once its authenticity is guaranteed, virgin oils are classified by quality, falling into the categories of “Extra Virgin Olive Oil” or “Virgin Olive Oil.” Thus, the “Extra Virgin Olive Oil” category includes oils of superior quality, featuring intense fresh olive flavor and aroma, an acidity of 0.8% or less, and no organoleptic defects.
