Bacalhôa, produced from Moscatel Roxo grapes planted in 2003 on the northern slopes of Serra da Arrábida in Azeitão, at the Quinta dos Frades vineyard. After a careful sampling of the grapes in the vineyard, the harvest date was set. The grapes entered the cellar, were cooled and gently pressed; the juice obtained, after clarification, fermented at low temperatures (10–12 °C), achieving a very slow fermentation aimed at preserving the primary aromas of the variety.
