Born from the meticulous hand of Rui Roboredo, this Beyra Bio offers a delightfully unconstrained experience. The grapes, harvested with the exacting standards of organic viticulture, are gently handled and pressed at the optimal moment, avoiding any unnecessary delay. Fermentation, orchestrated by native yeasts – veritable masters of transformation – is carefully maintained at 16-17°C, allowing the wine to evolve naturally. Maturation amongst the lees adds a remarkable complexity, truly showcasing the potential of the Syrah, Malvasia Fina and Rabo Roxo grapes. A bold choice perfectly suited to fresh grilled fish or a roast chicken infused with aromatic herbs.
