Bibi Graetz O Colore is the pinnacle of Bibi Graetz’s vision, sourced from very old Sangiovese vines. Poor soils, mixed with sand and stone, coupled with high altitude, create the ideal terroir for a wine that captures much of the Tuscan essence and its ancestral flavor. Only the finest barrels from the entire production are selected to become Colore. 2019 Vintage: The 2019 harvest offered ideal conditions for full and healthy vine development. During spring, scarce rainfall helped prevent disease. Summer was marked by a wide diurnal temperature range and a very balanced climate, allowing a slow and complete ripening of the grapes. The result was a harvest with perfect sugar and acidity levels and remarkable aromatic complexity. The harvest took place from 21 September to 8 October. Vinification and Maturation: The grapes destined for Colore were hand‑picked in three vineyards: Lamole, Vincigliata, and Siena. Each vineyard was harvested up to eight times to ensure bunches were taken at the optimal ripeness point. After a first selection in the vineyards, a second rigorous selection took place in the cellar before destemming. The berries were gently pressed and placed in open barrels (barriques), keeping each lot vinified separately. Fermentation proceeded with indigenous yeasts, without temperature control, with 6 to 8 punch‑downs and manual racking each day, without bleeds. This stage lasted about two weeks, followed by an additional week of skin contact. The wine was then transferred to new barrels, where malolactic fermentation occurred. Each lot matured separately for about 20 months before the final blend was decided.
