Bibi Graetz Espumante

Description

Bibi Graetz Bollamatta is a brut rosé made from Sangiovese grapes grown on the finest vineyards, with vines aged between 50 and 80 years – the same as those used for Testamatta and Colore. The harvest is delayed in green to achieve the perfect sugar concentration for a sparkling wine. After the harvest, the grapes are destemmed and subjected to a gentle pressing. The pomace remains in contact with the must for 4–5 hours to extract aromas and colour. The alcoholic fermentation takes place in temperature‑controlled stainless‑steel tanks, and the second fermentation occurs in an autoclave with yeast contact for about two months.
