Description

BiniVista This wine is named after the Puig de Galatzió mountain, part of the Tramontana range. At 1,027 metres, it is one of Majorca’s highest peaks, located just behind the picturesque village of Estellencs. White grapes have always played an important role in the area, and the choice of this name for the white wine pays tribute to Giro Ros and Chardonnay. The mountain lies at an angle of 265° relative to the cellar. Vinification: The Chardonnay harvest took place on 11 and 12 August. We processed a total of 4,695 kg, from which 2,300 litres were ready for fermentation (we use a very gentle press on white varieties, losing between 35 % and 50 % of the total yield during pressing). On 16 and 17 August, we harvested 6,563 kg of Giro Ros, which after processing yielded 4,250 litres of must with beautiful texture and structure, ready to ferment. After fermentation, we decided to blend 2,300 litres of Chardonnay with 2,900 litres of Giro Ros. To this batch we added a touch of charm and spice: 1,150 litres of Viognier and a hint of Sauvignon Blanc for freshness and bite! The remaining Giro Ros went into two 500‑litre oak barrels as an experiment, plus a small 250‑litre holding tank for bottling. This incredible “gastronomic” wine is super versatile and works magic in large glasses! Galatzó can be enjoyed anywhere with any dish. It is a highly adaptable wine that will make any occasion, food, or company shine even brighter, highlighting the best in everything. Serve it in a large glass to allow it to breathe and reveal its beauty through a bit of oxygenation. Delicious with clams sautéed in a skillet for 2 minutes until they open, with fresh olive oil, a touch of parsley and garlic, and a splash of the same wine and lemon juice. For a slightly more elaborate option, try baked sea bass with coconut milk, ginger, chili, lime, and cilantro. Indulgent, but a marvelous combination!
