“This BiniVista is certainly a bold statement – born at the foot of the dramatic Puig de Galatzió, at a staggering 1027 metres! It’s a celebration of both altitude and the island’s winemaking heritage. The winemaking itself is delightfully unconventional: a blend of Chardonnay, Giro Ros and Viognier, a trio that dares to surprise. Harvesting nearly 5 tonnes of grapes, the result is a richly complex must, fermented in both stainless steel tanks and oak barrels, where these three varieties find an exceptional harmony. The producer claims it’s “perfect for any occasion, food or company,” and frankly, it sounds rather promising. It’s recommended to serve in a large glass, allowing it to ‘breathe’ and fully express its character. Paired with grilled clams or a succulent red snapper with coconut milk, this wine certainly has the potential to elevate any meal – though, of course, a word of caution: it contains sulphites.”
