BiniVista This wine is named in honour of Puig de Randa mountain, located in the centre of the island and a solitary peak that is not part of the Serra de Tramontana. Although Puig de Randa is not particularly tall – only 540 m – it is undoubtedly one of the most popular, just like the Pinot Noir grape, which plays a key role in this wine. Our Pinot Noir vines are planted facing the mountain at a 157° angle relative to the cellar. Vinification: In 2021 we aimed to harvest a Pinot Noir with lower alcohol potential than the previous year and with far more freshness and finesse. Balancing phenolic and physical ripening in Pinot Noir is always a challenge. We harvested on 10‑11 August, carefully selecting only perfect clusters and rigorously picking in the vineyards to avoid shriveled grapes and raisins. This meant minimal sorting at the bench. The grapes were destemmed and crushed, then fermented with skins, with gentle, daily pumping and gentle crushing. Afterwards they were pressed, yielding 6,500 litres of fine Pinot Noir, which was transferred to a total of nine 500‑litre barrels and left to mature for about a year. During that time we periodically tasted the barrels and began to form an idea of how each would fit into the annual “Pinot Puzzle” of Randa! Before bottling a very gentle clarification with egg whites was carried out to soften the tannins and give the wine a velvety texture, as any good Pinot Noir should. Bottling: November 2022. Launched December 2022. This is the ideal wine to accompany classic French bistro fare, but it also soothes the soul on a melancholy winter afternoon. Just open a bottle, play Human League, Simply Red, or George Michael, and forget the rest of the world. Try it with quail, pheasant or a lamb loin! Cooked slowly to preserve all the juices and served with twice‑fried “Chucky” potatoes in duck fat and a simple salad with a mustard vinaigrette. Simplicity is key.
