Graham's The grapes are hand-harvested from two grape varieties: Malvasia Fina and Muscat. The grapes are crushed, and fermentation begins with natural yeasts. Sugar levels are monitored. Once the required sugar level is reached, neutral spirit (77% vol) is added. This raises the alcohol content to up to 19% and stops the fermentation.
