This Faraón Oloroso from Hidalgo is a prime example of Spanish dedication. The fermentation, meticulously controlled at 17°C, really allows the grapes – sourced from their own vineyards in Balbiana and Miraflores in Sanlúcar – to shine. That Atlantic influence gives it a wonderfully persistent salinity. Perfect with aged cheeses or a dark chocolate – a classic pairing, wouldn’t you say?
