This Pedro Ximénez from Toro Albalá is a passionate tribute to aged wines, much like the man himself, José María Toro Albalá envisioned. The Montilla-Moriles D.O., with its Mediterranean climate and generous sunshine, imparts a truly remarkable richness to this grape. The “albarizas” – those chalky soils – and the smooth, clay-rich terroir beautifully reflect in the wine, revealing complex and lingering notes. It’s utterly divine with blue cheese or foie gras, or even a vanilla ice cream – best enjoyed at a cool 8°C, of course, in a Riesling or Sensus glass.
