Hiding in plain sight from Toro, the 1968 Don PX Selección is a truly remarkable find – it seems to have defied both time and, frankly, the price tag! Forty-seven years spent maturing in American oak has gifted it with an incredible concentration and complexity, hinting at a very old secret. Remarkably, it retains 340g of residual sugar alongside a surprisingly vibrant acidity for its age. This intensely sweet wine delivers a punchy, almost primal, finish, reminiscent of a well-aged cheese and stout bread – a seriously rewarding pairing.
