“The Don PX Seleccion from 1965 – quite the irony, isn’t it? These ‘old’ Pedro Ximénez grapes, somehow achieving a deep, almost brooding black hue, as if they’d spent a long time chatting with age. Bottled in 2014 with a wonderfully persistent sweetness of 290g of residual sugar, this PX has clearly had a remarkably long and fascinating life – much like the wine itself. A perfect match for fig preserves or aged cheeses; a truly transporting flavour experience!”
