Boizel O Joyau de France Chardonnay was created in the magnificent year 1989, almost thirty years after the launch of the prestigious cuvée of Casa Boizel, under the guidance of René Boizel, who in the exceptional and memorable year of 1961 introduced his Joyau de France. Joyau Chardonnay is the quintessence of Champagne Boizel’s savoir-faire: a perfect balance. With more than a decade of aging in the cellars, this 100 % Chardonnay expresses the full character of the vineyards of Côte des Blancs and reveals its great aging potential. Vinification: For the production of Joyau de France Chardonnay 2007, only Chardonnay grapes from the four Crus of Côte des Blancs—Avize, Le Mesnil-sur-Oger, Oger, and Vertus—were selected. Only the first press is used to create this exceptional Champagne. The wine was aged for 15 years on lees. Dosage: 5 g per liter. Pairing: Joyau de France Chardonnay 2007 is the perfect match for shellfish and simply cooked fish: grilled scallops, turbot with anise, Arctic char with fresh vegetables, and also with outdoor game birds, roasted or stewed (Bresse chicken with herbs).
