Bom Malandro White is produced from grapes grown on vineyards situated at high altitude (above 500 metres), in strategically chosen locations along the Douro Demarcated Region, where cooler temperatures provide ideal conditions for cultivating white varieties, effectively preserving the grapes’ natural acidity and enhancing their aromatic components. Vinification: After destemming and gentle crushing of the grapes, a brief skin maceration optimises the extraction of desirable aromatic compounds and precursors. Following clarification, the must is fermented in stainless‑steel tanks at a controlled temperature between 15 and 17 °C. The reductive vinification is extended during the subsequent maturation phase, avoiding any contact with oxygen as much as possible until bottling, to preserve the primary aromas that are essential to the overall profile of this wine.
