“Borges’s approach to this sparkling wine is impressively meticulous, utilizing Encruzado and Fernão Pires grapes and employing a complete délestage – they don’t hold back! This results in a wonderfully vibrant acidity. The slow fermentation at just 14°C is key to preserving the wine’s distinctive character. Following a delicate lees ageing, the second fermentation is carefully monitored at 12°C in the cellar, producing a wine brimming with freshness. It’s a fantastic match for rich foie gras or grilled white fish – a predictably excellent choice, frankly.”
