This Borges white from the Dão clearly had a lengthy chat with its Encruzado, Bical, and Fernão Pires grapes. The winemaker treated the must with a certain respect, carefully selecting only the finest elements. Fermentation, held cool at 12-14°C, with a generous 85% of the grapes embracing the spirit of oak aging in French barrels, delivers a rich and complex character. Eight months of *batonnage* – gently stirring the lees – added a touch of sophistication. Perfect with cod, of course, but also for those who appreciate a wine with a story.
