Following hand-harvesting from our five historic vineyards in the Barolo municipality, the grapes are gently destemmed and crushed at the winery. This is followed by spontaneous fermentation in large concrete tanks, maintaining a temperature between 22° and 28°C for approximately 15 days. Subsequently, extended maceration in a submerged concrete vessel for 20 days, during which malolactic fermentation also takes place. The wine is then transferred to large Slovenian oak barrels for further aging of over 24 months, before being returned to concrete tanks for final clarification prior to bottling.
