Selected from our three most prized Cru – Cannubi, Liste, and Fossati – these wines benefit from spontaneous fermentation in concrete tanks at low temperatures, followed by extended maceration – sometimes up to 50 days – submerged in the same vessel. They then spend six years aging in large Slovenian oak barrels, culminating in a further six months bottle-aged before release.
