This Bouchard Nuits-Saint-Georges is a true testament to time – you can taste the years in it. Expect a few battle scars on the bottle, but don't let that fool you; the Pinot Noir is very much alive, maturing at its own pace. Be patient with this one – a little aeration will coax out the aromas it’s been holding onto. If you see some sediment during decanting, it’s simply the wine expressing its full character, and it would pair beautifully with red meats and mushrooms to really bring out its complexities.
