Brancaia Brancaia IL Bianco is a pure Sauvignon Blanc; a fresh white wine with a fruity bouquet that, by not completing malolactic fermentation, delivers a refreshing acidity. **Vinification** From 1 to 8 September we harvested the grapes for this wine, 100 % Sauvignon Blanc from Radda, only in the early‑morning hours so they arrive fresh to the cellar. There, we let them ferment spontaneously after twelve hours of contact with the pressed pulp at 16 °C. By avoiding malolactic fermentation we obtain a wonderfully fresh wine that, thanks to five months of aging on lees (⅓ in barrels, ⅔ in stainless‑steel tanks), has excellent structure. > “The palate is simple and direct.
