Description

Quinta dos Carvalhais Branco Especial is a non-vintage wine, which confirms the excellence of Dão in producing great whites and the ageing potential that characterises the wines of the region. VINIFICATION Some of the grapes were hand-harvested into 20 kg crates and unloaded into the pneumatic press. The field blend, after harvesting, underwent skin maceration for 24 hours. The musts were subjected to static settling at low temperature for 24 hours. They were then fermented in temperature-controlled stainless steel tanks for about 20 days. MATURATION This wine seeks to revive the old Dão tradition of ageing white wines, when it was common to mature them for long periods in old oak casks, thus experiencing a variety of environmental conditions throughout the year. This white blends wines from 8 different years, with an average of 7 years of ageing in used 225-litre oak barrels, each with varying degrees of use.
