Bruno Paillard, as usual, isn’t messing around – their Dosage Zero is a bold statement: pure, energetic Champagne with absolutely no residual sugar. They meticulously blend over 30 vineyards, including some of the region’s finest, using the first press from three legendary vines. After a patient three to four year fermentation on the lees, it’s then allowed to rest for six months, clearly defying convention. It’s a Champagne that demands respect, and pairs brilliantly with fresh oysters – a truly explosive combination, as noted by Robert Parker (91/100), Vinous (93/100) and James Suckling (91/100).
