This C de Cabriz, a white from the Dão, clearly enjoyed a rather pampered upbringing – gentle pneumatic pressing, no drama! Following a full délestage, fermentation at 15°C was meticulously monitored with two months of batonnage in stainless steel. The result is a remarkably elegant and refreshing wine, perfectly suited to complement grilled fish or seafood. It’s a promising companion, wouldn’t you say?
