This “Ujo” from Quinta da Boavista – claiming to be among the world’s best – certainly raises an eyebrow. Fermented in open granite vats, the Oratório grapes deliver a wonderfully raw edge, which contrasts beautifully with the oak aging in French barrels. It’s a surprisingly complex combination, promising a tasting experience that’s anything but predictable. Perhaps best enjoyed with *bacalhau à Brás* to balance the wine’s richness with the sharpness of the onion.
