On the palate, it’s a vibrant affair, driven by a serious level of acidity, and that characteristic “mine water” minerality was recognised by Wine Monthly, who awarded it 91 points. It would pair beautifully with grilled fish and a squeeze of lemon, or perhaps a creamy, tangy sheep’s cheese.
