CalCariO3 from Principal Chardonnay is a wine that reflects a meticulous winemaking process. After an initial period of 6 to 9 months in French oak barrels, the wine is transferred to large used wooden casks with a capacity of 2,000 litres, where it rests for about 3 months before bottling. The wine is released after up to 2 months in bottle. It shows a lemon-yellow colour with slight green reflections, and a captivating aroma that combines notes of struck match with tropical fruit and wet stones. On the palate, it has a medium body, vibrant acidity and a distinct, linear minerality that evokes a refreshing sensation of spring water, lingering through to the finish.
